Red Velvet - Walentynkowy Klasyk

Dziś pora na walentynkowy klasyk: cupcakes Red Velvet z buttercream z kremowego serka. Są to prawdopodobnie najczęściej robione na tę okazję cupcakes. Ja też nie mogłam się im oprzeć. Te babeczki nie tylko imponują swoim wyglądem, ale i smakiem. Są niesamowicie aksamitne (stąd ich nazwa) i mają w sobie nutkę kakao. Do tego chmurka z kremowego serka... Pycha!
Ja do ich dekoracji użyłam serduszka zrobione z zabarwionego na czerwono lukru królewskiego. Sposób ich wykonania był taki sam jak śnieżynek z tych babeczkek. Serduszka są wprawdzie pracochłonne i łatwo się kruszą, więc trzeba wykonać ich więcej, licząc się ze stratami, ale jako że Walentynki są tylko raz w roku... chyba można pozwoli sobie na ten dodatkowy wysiłek!

Składniki na 8-10 babeczek:
  • 50g masła w temperaturze pokojowej
  • 150g cukru
  • 1 jajko
  • 1 czubata łyżeczka kakao (bez cukru)
  • ½ łyżeczki czerwonego barwnika w paście (ja użyłam Extra Red marki Sugarflairi)
  • 1 łyżeczka ekstraktu z wanilii
  • 120ml maślanki
  • 140g mąki
  • ½ łyżeczki sody oczyszczonej
  • 1 łyżeczka octu
Buttercream z kremowego serka pochodzi z tego przepisu. Jedyną różnicą jest to, że nie dodałam skórki z cytryny.

Rozgrzewamy piekarnik do 170C i wykładamy blachę do babeczek papilotkami. Przesiewamy mąkę i kakao i odstawiamy. Miksujemy masło z cukrem. Nie przestając miksować dodajemy jajko i ekstrakt z wanilii. Następnie dodajemy połowę mąki wymieszanej z kakao, maślankę, a póżniej resztę mąki. Gdy masa stanie się jednolita dodajemy czerwony barwnik aż do uzyskania pożądanego koloru (uwaga: nie wszystkie barwniki dadzą pożądany efekt; polecam te w paście; Extra Red sprawdził mi się doskonale). Na koniec mieszamy w niewielkiej szklance ocet z sodą i gdy zacznie musować dodajemy do ciasta i mieszamy. Wykładamy ciasto do papilotek (maksimum do ⅔ ich wysokości) i pieczemy przez ok. 20 minut lub do tzw. suchego patyczka. Po wyjęciu babeczek z piekarnika odstawiamy je na jakies 5 minut, a następnie wyjmujemy na kratę aż do ostygnięcia.

Po ostygnięciu dekorujemy babeczki buttercream. Ja do dekoracji swoich użyłam końcówki 1A Wiltona i na koniec wetknęłam w buttercream wspomniane wcześniej lukrowe serduszka.

Red Velvet Cupcakes - Valentine's Day Classic

Today it's time for Valentine's Day classic: Red Velvet cupcakes with cream cheese buttercream.These are probably most popular cupcakes for the occasion.Nobody can resist them, neither could I. These cupcakes not only impress with their look, but also with their taste. They are incredibly velvet (hence their name) and have the hint of cocoa. And then comes a cream cheese cloud on top... Delicious!

To decorate these cupcakes I used hearts made of red colored royal icing. Their preparation is the same as the snowflakes I made for these cupcakes. The hearts are indeed time consuming and easy to crumble, so you need to make more of them, counting the losses, but since Valentine's Day is only once a year... this extra effort might be worth it!

Ingredients for 8-10 cupcakes:
  • 50g of butter at room temperature
  • 150g sugar
  • 1 egg
  • 1 heaped teaspoon cocoa powder (no sugar added)
  • ½ teaspoon of red colorant in paste (I've used Extra Red from Sugarflair)
  • 1 teaspoon vanilla extract
  • 120ml buttermilk
  • 140g flour
  • ½ tsp bicarbonate of soda
  • 1 teaspoon of vinegar
Cream cheese buttercream comes from this recipe. The only difference is that this time I didn’t add the lemon peel.

Preheat oven to 170C and prepare the cups. Sift the flour and cocoa and set aside. Mixe the butter with the sugar. While continuing to mix, add the egg and vanilla extract. Then add half of the flour mixed with cocoa, then buttermilk, and later the rest of the flour. When the dough gets homogenous add red colorant until obtaining the desired color (note: not all colorants will give the desired effect, I recommend the ones in paste; Extra Red from Sugarflair proved perfect). At the end mix in a small cup vinegar and baking soda. When it gets fizzy add the mixture to the dough and mix. Fill in the cups with the dough (not more than up to ⅔ of their height) and bake for about 20 minutes or until obtaining so called dry stick. Once removed from the oven wait 5 minutes, and then take the cupcakes out to the cooling grid.

Once cooled, decorate cupcakes with the buttercream. For my cupcakes I used Wilton tip 1A and at the end I stuck in the buttercream royal icing hearts.

  2. Robiłam podobne na walentynki, chociaż z samą obramówką serduszka, a nie takie śliczne ażurkowe cudeńka. Poprawię się w przyszłym roku, bo są cudowne!
